Eden's Elixirs:  Mulberries

Mulberries are an anti-aging superfood. This dark little berry is high in protein, fiber, antioxidants, nutrients like iron, calcium, Vitamin A, C, E and K, Folate, thiamine, lutein, Pyridoxine, Niacin, and Resveratrol.

Resveratrol is an anti-aging antioxidant. Harvard Medical School's David Sinclair states that, “Resveratrol appears to help increase the activity of mitochondria, which produces energy within cells, potentially extending their lives.”

Mulberries are also delicious and versatile.

This sweet mellow berry is flavored with hints of citrus and fig. When ripe, they easily fall from the branch so harvesting is as easy as laying down a tarp, shaking the branch, and collecting the booty. They're a nice treat raw or cooked and work in anything from salads & smoothies to BBQ sauce & homemade wine.

The Institute for Traditional Medicine prescribes the anti-inflammatory mulberry (fruit or tea) to cleanse and detox the blood, heart, and kidneys. It improves circulation, relieves clots, anemia, weakness, fatigue, and premature graying of hair.

This fountain of youth berry promotes heart health and overall vitality. It's delicious medicine! Mulberries can be used in most berry recipes. Here's a few simple ones to get you started, enjoy!

Mulberry Tea

Ingredients:

1-2 Tablespoons Mulberry leaves (fresh or dried)
8 oz. hot water

Directions:
1). Heat water to barely simmering, remove from heat at first sign of bubbles.
(Water that is too hot will diminish the tea's medicinal value.)

2). Stir leaves into water, steep for 3-5 minutes.

3). Strain tea into cup & enjoy

Mulberry Maple Syrup

Ingredients:

5 cups Mulberries
1 cup Sugar
1/4 cup Maple Syrup
Airtight glass container (pint Mason jar, etc)

Directions:
1). Wash & dry berries, then place them in a medium sized pot. Heat over medium heat while stirring and mashing berries for 5 min.

2). Stir in sugar and continue cooking for 15 minutes, stirring and mashing berries often.

3). Remove from heat and stir in Maple Syrup.

4). Pour into airtight glass jar, such as a 16-oz (pint) Mason jar.
